सर्दियों का टाइमपास: मूंगफली

सर्दियों में लोग मूंगफली (Peanuts/ Groundnuts) स्वाद और टाइमपास करने के लिए खाते है, लेकिन इनके स्वास्थ्य रक्षक गुणों को नहीं जानते। इसके सेवन से मधुमेह, स्मृति वृद्धि, अवसाद और तनाव दूर करने आदि रोगों  रोकने में भी मददगार है।

 *मूंगफली के फायदे*

जैसा कि हम जानते है, मूंगफली में बहुत सारे पोषक तत्‍व होते है जो हमारे स्‍वास्‍थ के लिए लाभदायक होते है। आइए जाने कि पीनट्स हमारी कौन कौन सी बीमारी को रोकने में मदद करता है।
जिन्‍हें जानकर शायद आप भी इसका नियमित उपभोग करने लगें।
1. मूंगफली शरीर के लिए आवश्यक कई खनिज तत्वों जैसे आयरन, जिंक, मैग्नीशियम, पोटैशियम, कैल्शियम, सेलेनियम, मैंगनीज, कॉपर का बहुत अच्छा स्रोत होता है।
2. 100 ग्राम कच्ची मूंगफली में 1 लीटर दूध के बराबर प्रोटीन की मात्रा पाई जाती है। 250 ग्राम भुनी मूंगफली में 200 ग्राम मीट से भी अधिक  खनिज लवण और विटामिन पाया जाता है।
3. यह शर्करा को संतुलित रखने में मददगार होती है। मधुमेह के रोगी इसका लगभग 40-50 ग्राम तक सेवन कर सकते है। मूंगफली में पाए जाने वाला मैंगनीज नामक तत्व ब्लड शुगर नियंत्रित करता है, शरीर में कैल्शियम के अवशोषण में मदद करता है और मेटाबॉलिज्म तेज करता है।
4. मूंगफली में उपस्थित आयरन  और कैल्शियम की प्रचुर मात्रा रक्‍त में आक्‍सीजन के परिवहन और हड्डियों को मजबूत बनाने का काम करते है। यह आपके शरीर के विकास में महत्‍वपूर्ण भूमिका निभाता है। सर्दी जुकाम से बचाव के लिए हर रोज इसका सेवन करें, इससे शरीर गर्म रहेगा और फेफड़े मजबूत होंगे।
5. मूंगफली प्रोटीन का एक बहुत अच्छा स्त्रोत है। इसमें होने वाला अमीनो एसिड शरीर की ग्रोथ के लिए बहुत अच्छा होता है और इसलिए बच्चों के लिए यह बहुत लाभकारी है।
6. यह खराब कोलेस्टेरॉल को कम कर अच्छे कोलेस्ट्रॉल का स्तर नियमित करता है। हृदय रोगी भी स्वस्थ हृदय के लिए इसका सेवन कर सकते है।
7. मूंगफली में एंटीऑक्सीडेंट्स काफी मात्रा में होते हैं जो मूंगफली को उबालने पर और ज्यादा सक्रिय हो जाते हैं। इसमें मौजूद बॉयोनिक-A दो गुना और जेनिस्टइन चार गुना बढ़ जाता है जिससे आपके शरीर में भीतरी साफ सफाई सुचारु और नियमित रुप से होती रहती है।
8. मूँगफली में पाए जाने वाला एक तत्व नियासिन मष्तिष्क में रक्त का प्रवाह बढ़ाता है, जिससे अल्झाइमर रोग, तंत्रिका तन्त्र के रोर्गों से बचाव होता है।
9. यह फाइबर और एनर्जी से भरपूर होती हैं। वजन कम करने के इच्छुक इसका सेवन करें, तो भूख कम होगी, लेकिन शरीर की एनर्जी बरकरार रहती है।
10. अवसाद, तनाव में हैं तो आप इसका मक्खन यानी पीनट बटर अपनी डाइट में शामिल कर सकते है। आप इसे स्नैक के रूप में ले सकते है। मूंगफली में ट्रिपटोफान नामक एमिनोएसिड होता है जोकि मूड सुधारने वाले हार्मोन सेरोटोनिन का स्राव बढ़ाता है। जिससे मूड अच्छा होता है और मन शांत होता है।
11. इसमें मौजूद एंटी-ऑक्‍सीडेंट पर्याप्‍त मात्रा में होते है। जो पकाने या उबालने के बाद ज्‍यादा सक्रीय होते है। पकाने के बाद जैनिस्‍टीइन में चार गुना वृद्धि होती है और बॉयोनिक-A नामक एंटी-ऑक्‍सीडेंट में दो गुनी वृद्धि होती है। ये त्‍वचा  में होने वाले हानीकारक प्रभावों को रोकने में मदद करता है। जिससे आपकी त्‍वचा स्‍वस्‍थ व निरोगी होती है।
12. महिलाओं की प्रजनन क्षमता को मजबूत बनाने के लिए इसका उपयोग उत्तम है। यह शरीर को ऊर्जा, प्रोटीन, विटामिन और मिनरल्स प्रदान करता है। गर्भावस्था के दौरान यह भ्रूण को संरक्षण प्रदान करता है। मूंगफली को प्रेंगनेंसी के पहले और शुरुआत में खाना शुरू कर देने से बच्चे में हो सकने वाले गंभीर न्यूरल ट्यूब डीफेक्ट 70 प्रतिशत तक कम हो जाता है।

*मूंगफली खाने में सावधानियां*

  • सबसे महत्वपूर्ण मूंगफली के सेवन से एलर्जी हो सकती है उन लोगों को इसके इस्तेमाल से बचने की सलाह दी जाती है जिन्हें मूंगफली और मूंगफली उत्पादों से एलर्जी होती है।
  • थाइरोइड रोगियों को मूंगफली सेवन नहीं करना चाहिए। इसमें पाए जाने वाला Goitrogens नामक तत्व थाइरोइड ग्रन्थि की प्रक्रिया असंतुलित कर सकता है।
  • मूंगफली एक हाई कैलोरी युक्त बीज है, इसके अधिक सेवन से मोटापा भी हो सकता है, अतः संतुलित मात्रा में ही इसे खाएं।
