मशहूर मशरूम

आज के समय की सब्जी कहा जाने वाला मशरूम, लगभग दो हजार वर्ष पुराना है। कहा जाता है कि दो हजार वर्ष पहले चीन और जापान में सूजन, गठिया और अन्य दर्दों के उपचार के लिए रेशी नाम के मशरूम का इस्तेमाल किया जाता था। मशरूम खाने में तो स्वादिष्ट होता ही है, स्वास्थ्य के लिहाज से भी यह लाभकारी माना गया है। 100 ग्राम मशरूम में केवल 34 कैलोरी होती है। इसके अलावा यह फैट और कोलेस्टेरॉल फ्री होता है। इसमें  विटामिन्स, सोडियम, पोटैशियम, जिंक, कॉपर  आदि मिनरल्स व खनिज तत्व पाए जाते है। इसकी खास बात यह है कि पकाने के समय भी इसके खनिज तत्व बने रहते है। आइए जानते है मशरूम की कुछ और खास बातें -
  • मशरूम एक तरह का प्रोबायोटिक फूड है। इससे बीमारियों से लड़ने में मदद मिलती है और इम्यून सिस्टम को मजबूत बनाने में भी मदद करता है। चूंकि इसमें जिंक होता हैै, जिससे शरीर की व्हाइट गुड सेल्स को मजबूती मिलती है और यह बीमारियों से लड़ पाते है।
  • मशरूम आसानी से पच जाता है और पेट की बीमारियों से निपटने के लिए भी अच्छा होता हैै। इसमें विटामिन बी 2 और विटामिन बी 3 पाया जाता है, दोनों  मेटाबॉलिज्म को सक्रिय बनाने में मदद करते है।
  • मेटाबॉलिज्म अच्छी तरह से काम के तो इसके लिए जरूरी है कि शरीर को प्रोटीन, फाइबर और विटामिन्स की अच्छी मात्रा मिलें। मशरूम में इन तीनों की अच्छी मात्रा पायी जाती है।
  • शाकाहारियों के लिए प्रचुर मात्रा में सेलेनियम का सेवन करने के लिए मशरूम बेहतर स्रोत है। इसमें सेलेनियम प्रचुर मात्रा में पाया जाता है। सेलेनियम से हड्डियों की सेहत में सुधार आता है और दांत, बाल और नाखून मज़बूत बनते हैं।
  • मशरूम लिवर के लिए बहुत अच्छा होता है। चिकित्सा के लिहाज से रेशी मशरूम का फेफड़ों पे अच्छा प्रभाव पड़ता है खासकर जिन्हें अस्थमा  या अन्य सांस संबंधी समस्या है।
  • मशरूम एक प्रकार का एंटी-डायबेटिक फूड भी है। इनमें पाए जाने वाले तत्व अग्नाशय और अंतः स्त्रावी ग्रंथियों को सुचारू रूप से काम करने में मदद करते है।

कई देशों में तो एड्स से लड़ने में इसके प्रभाव पर भी अध्ययन किया जा रहा है। अध्ययन बताते हैं कि यह कैंसर के खतरे को कम करने के अलावा कोलेस्टेरॉल को भी नियंत्रित करता है।
